When you finally get tired of making waffles from a box, this recipe is for you. The difference between the box and this recipe is amazing.
One morning I had two waffle irons going, and I decide to test this recipe out and compare it to box mix. My family is still raving about these new waffles I made – like it was me or something, it was the recipe.
- 3 ½ cups all-purpose flour
- 2 teaspoons salt
- ½ cup sugar
- 2 tablespoons baking powder
- 8 large eggs, separated
- 3 cups milk
- 1 cup butter, melted
Sift together the flour, salt, sugar, and baking powder into a large mixing bowl. Make a well in the center of the dry ingredients.
Whisk together the egg yolks, milk, and melted butter in a separate bowl. Pour the wet ingredients into the well of the dry ingredients, stirring until just combined. The batter will be slightly lumpy. DON”T over mix.
Preheat the waffle iron
Whip the egg whites to soft peaks and fold into the batter in two additions.
Ladle out ¾ coup batter into the waffle iron. Cook the waffles until they are crisp, golden, and cooked through, 3-6 minutes depending on your iron.
